Since being diagnosed with Celiac Disease, I have been on a very long journey...searching for the perfect pizza crust. I have found a few which give me happiness. Udi's is palatable and Domino's has a small gluten free pizza that tastes just like the real thing (However, there is a possibility of cross contamination. So, buyer, beware). I hear Papa John's ancient grain crust is tasty too.

My husband is a history teacher, Seinfeld aficionado and movie buff. We spend an embarrassing amount of time communicating with each other through quotes. Now that the girls have caught onto this general strangeness, we don't just speak in our alien language, we are now writing it on sticky notes and hiding our favorite sayings in random places for each other to find. Lunchboxes, in the middle of books that my girls are in the process of reading, book bags, pants pockets, drawers, behind picture frames...these words of wisdom will be popping up for years to come.
About five years ago, I was diagnosed with Celiac Disease. Since then, I am on a near daily search for tasty, easy and healthy snack and meal plans. Going gluten free isn't as hard as it seems but it also isn't always great fun. Roast Beef & Mozzarella Roll-Ups are a hit with me and my family thanks to their tastiness and versatility.
Just finished this delicious Black Bean and Corn Vegetable Wrap created by Cindy Silver of Market Basket Nutrition. I accidentally used lemon instead of lime (long story). Anyway, you can't tell in the video and it actually tastes great!
